Whiskey Bacon Gravy
Fry the bacon until crisp and remove from the pan.
Sauté the shallot in the bacon fat until translucent.
Remove the shallot and add the flour to the bacon fat and cook stirring until the flour is cooked or about a minute.
Add the whiskey and let it flame then add the bay leaf and broth a little at a time until a nice gravy forms.
Add the bacon and a little butter.
Adjust the seasonings with salt and pepper.
Garnish with parsley.
Great on steak or biscuits.
