Stone Fence Pork Loin
Brown the roast on all sides in a Dutch Oven. Remove from the pot and add the onions, apples and celery. Cook and stir until somewhat golden.
Rub the roast with mustard and pat on the brown sugar. Deglaze the pot with cider.
Put in the pork and roast slow at 300 degrees for 3-4 hours or until fork tender.
At the very end, add the Stone Fence Whiskey and use pan drippings for gravy over roasted potatoes.
