Seafood With Tarragon Sauce

 River Rose Gin
Ingredients
 1 lb Scallops or Shrimp
 3 tsp Flour
 4 tsp Butter
 1 pinch Salt and pepper
 3 tsp Butter
 3 tsp Flour
 ¾ cup River Rose Gin
 1 cup Cream
 ¼ cup Fresh lemon juice
 2 tsp Fresh Tarragon
 1 tsp Fresh Parsley
Directions

Dust the seafood with flour salt and pepper

Sauté in the butter until just cooked

Remove the seafood from the pan and set aside

Add the second lump of butter and cook the flour in it for one minute

Add the River Rose Gin and stir until smooth

Add the cream and then the lemon juice

Last add the fresh herbs

Stir in the seafood and serve with cooked rice
