Bourbon Bacon And Tomato Jam
Cook the bacon and drain on paper towels.
Deglaze the pan with the tomatoes.
Add all the other ingredients BUT leave the Bourbon until after the cooking has stopped.
Cook the jam for an hour or two until thickened.
I use a slow cooker so I don’t have to stand and stir.
Put the jam in a jar and refrigerate between uses.
Awesome on cheese biscuits or with cream cheese on sliced French bread.
