Apple Rye Pork Roast
If you are lucky enough to have Stone Fence Apple Cider Whiskey, you can substitute it for the apple juice and rye.
Mix the Rye and apple juice -OR- Stone Fence Whiskey with the mustard.
Marinate the roast in that mixture for a minimum of 4 hours or overnight.
Brown the roast and veggies in a heavy roasting pan.
Roast the meat until it reaches 145 degrees.
Sauté the apple slices in the butter and add a splash of Rye or Stone Fence.
Rest the pork for 30 minutes tented in foil then serve with the veggies and apples over the top and all around the roast.
